Thyme Sweet Potato Biscuits are simple to make, savoury and healthy. Tea and biscuits is the perfect combination, you can’t beat it.

Introduction

This is the easiest and the healthiest biscuits you can make. 

You can have them for breakfast, brunch or dinner as a side dish or appetizer.

Ingredients

Makes: 10-12 biscuits

  • 1 medium cooked sweet potato
  • 1 tablespoon maple syrup
  • 2 tablespoons melted coconut oil

Dry mix:

  • 240g (2 cups) whole-wheat flour
  • ½ teaspoon sea salt
  • 2 teaspoons baking powder
  • 1 tablespoon dry thyme

     

To Make

  • First, peel, cut in half and boil sweet potato until it is soft and cooked to the center.
  • Preheat oven to 175C (350F) and line a baking sheet with parchment paper or silicone mat.
  • In a bowl combine flour, baking powder,
    salt and thyme (dry mix).
  • Mash the sweet potato with maple syrup.
  • Add mashed potato and oil to the dry mix.
  • Fold gently to combine. Knead until dough starts to come together.
  • Divide the dough into 10-12 pieces. Roll each piece into a ball and place on the prepared baking sheet. Gently flatten each ball with the palm of your hand.
  • Bake for 10-12 minutes or until just barely golden brown.
Use all of your senses. Notice the colour, the taste, the texture, the smell, how it feels in your mouth … Slow down, let yourself enjoy it!
