Ingredients
Makes: 10-12 biscuits
- 1 medium cooked sweet potato
- 1 tablespoon maple syrup
- 2 tablespoons melted coconut oil
Dry mix:
- 240g (2 cups) whole-wheat flour
- ½ teaspoon sea salt
- 2 teaspoons baking powder
- 1 tablespoon dry thyme
To Make
- First, peel, cut in half and boil sweet potato until it is soft and cooked to the center.
- Preheat oven to 175C (350F) and line a baking sheet with parchment paper or silicone mat.
- In a bowl combine flour, baking powder,
salt and thyme (dry mix). - Mash the sweet potato with maple syrup.
- Add mashed potato and oil to the dry mix.
- Fold gently to combine. Knead until dough starts to come together.
- Divide the dough into 10-12 pieces. Roll each piece into a ball and place on the prepared baking sheet. Gently flatten each ball with the palm of your hand.
- Bake for 10-12 minutes or until just barely golden brown.
