This delicious breakfast we enjoy today was also enjoyed by the ancient Greeks and Romans. Throughout the world different countries have their own variation of the pancake using a wide range of ingredients. It really depends on the region they are being made, the history of that culture, and the available ingredients. Even Native Americans had their own version. They used to make them from ground cornmeal that was then cooked on hot rocks.
Pancakes are an essential part of a classic American breakfast. They are a perfect Sunday brunch or delight to cook for a crowd.

Ingredients
Serves : 2 people
- 80g (1 cup) oats
- 53g (⅓ cup) rice flour/chesnut or simply cake flour
- 60ml (¼ cup) water
- 240ml (1 cup) nut milk
- 2 tablespoon chia seeds
- 1 banana
- 1 teaspoon baking powder
- Pinch of salt
Optional: ½ tsp cinnamon, ½ tsp cardamom, or pinch of nutmeg, orange zest, 1 tsp vanilla extract.
Toppings: any nut butter, grated coconut, any fruit you like, extra cinnamon, homemade fruit chia jam, homemade granola, chocolate chips, honey.
To Make
- Simply add all ingredients into a blender and blend them until smooth.
- Heat skillet over medium heat and lightly oil the cooking surface with a drop of coconut oil.
- Pour pancake batter into skillet and make a circle.
- Cook for about 2-3 minutes or until golden brown then flip and cook for another 1-2 minutes more.
- It’s time for your favourite healthy toppings!
