Healthy Avocado Toast
This is a simple, nutrient-packed breakfast. Avocado toast topped with a shredded beetroot, garnished with goji berries and sprinkled with hemp seeds. I use them as a topping on oatmeal, smoothies, or salads.
Goji berries are not just delicious and colorful but also packed with antioxidants and powerful medicinal properties. I love to add them to my recipes.

Ingredients

- 2 slices whole grain bread
- 1 Hass avocado, mashed
- 1 small beet, shredded
- 2 teaspoons apple cider vinegar
- pinch of ground ginger
- sea salt & freshly ground black pepper, to taste
- hemp seeds and goji berries to garnish
To Make
- In a bowl stir together shredded beet with apple vinegar and a pinch of ginger. Season with salt and pepper.
- Mash avocado with a fork.
- To assemble, spread toast slices with mashed avocado. Season with salt and
pepper. - Top it with shredded beet.
- Sprinkle with hemp seeds and dried goji berries.
