Chocolate Pear Parfait is a healthy, easy to make, simple, fruity dessert. No sugar added!

Delicious Chocolate Pear Parfait

The parfait is a layered dessert served in a clear glass. 

I wanted to make a special dessert for new year’s eve and came up with this delicious chocolate pear parfait. It is layerd with fresh pears, dark chocolate, cashew cream and pear paste. I used fresh and dried fruit to bring natural sweetness, dark chocolate to add some crunchiness, and cashew creat to bind everything together. 

We had family over the other day so I made this dessert. Everyone loved it so I wanted to share with you the recipe so you can treate your family and friends with a easy and healthy dessert  🙂 I hope this delicious chocolate pear parfait  satisfies your sweet tooth! 

It’s very simple to make and it takes less than 15 minutes.

Ingredients

Servings: 4

  • 3 pears, diced
  • 70g dark chocolate, melted in a double boiler
  • some cardamom
  • some cacao nibs or nuts to garnish

Pear purée:

  • 50g dried pear (~5 slices)
  • hot water, to cover

Cashew Cream:

  • 225g (1½ cups) raw cashews, soaked for about 1h
  • 4 dried apricots, chopped
  • 1 teaspoon vanilla extract
  • pinch of sea salt
  • 240ml (1 cup ) water

To Make

  • Place the dried pears in a bowl & fully cover with hot water. Soak for about 30 min. Then place them in a high–speed blender. Blend until smooth, adding just as much of the soaking water as needed to make a thick paste.
  • Place the cashews & apricots in a high–speed blender. Add the water along with the vanilla and salt & process until very smooth.
  • Transfer to a container, cover & refrigerate until ready to use.
  • Assemble the parfait: place a layer of fresh pears in the bottom of a glass & sprinkle with cardamom. Follow with a drizzle of chocolate, & layer of cashew cream. Repeat 1 more time.
  • Finish with a layer of the pear purée & a sprinke of cacao nibs or nuts.
  • Transfer to the refrigerator & serve chilled.

Notes

  • You can play with different fresh & dried fruits, like mangos, raspberries… make your own version 🙂
