Chocolate Mousse

Chocolate mousse is my favourite dessert. It is quick, simple, and pretty. Plus everyone loves it.

This creamy, sugar free, luscious treat will become your favourite dessert too. You can make it a day ahead of time.

Take 5 Slow, Deep And Purposeful Breaths, Smile To Yourself. Set An Intention For The Meal.

Ingredients

  • 500g raw sweet potato
  • 200 ml unsweetened coconut milk
  • 20g (1 ½ tbsp) rum or brandy of your choice
  • 25g dark chocolate (70%)
  • 4 tablespoons unsweetened cocoa powder
  • 3 medjool dates
  • 1 teaspoon pure vanilla extract

To Make

Servings: 4 

  • Cook potato.
  • Melt chocolate over barely simmering water in a double boiler. Set it aside to cool slightly.
  • In a blender, combine all ingredients; blend until smooth and creamy.
  • Spoon into four 4 glass jars or serving dishes.
  • Sprinkle with some goji berries, grated coconut, and chia seeds.
  • Chill at least 3 hours before serving.

Notes:

You can sprinkle it up with your toppings of choice.

Use all of your senses. Notice the colour, the taste, the texture, the smell, how it feels in your mouth … Slow down, let yourself enjoy it!
