Coconut Almond Butter
Do you like bread with butter and jam in the morning? Mmmmm I bet this is your favourite breakfast. I know for sure that there are 65 million people that love this breakfast hehe.
How about you try something new? Bread with coconut almond butter and fresh fruit on top. Sounds appealing to you?
Most of nut butters you buy in stores have salt, sugar or oil added. This is the reason why I opt for a homemade version. It’s smooth, creamy, coconutty and so simple to make. So if you are a nut butter lover, make your own nut butter because it’s more delicious. You can experiment with ingredients and make your own blend. At the same time you will save money.
Almonds and flax seeds are rich in fibre, protein, healthy omega-3 fats, and micronutrients like vitamin E, magnesium, iron and calcium. They are loaded with antioxidants.
And fruit is nature’s candy! The best time to eat these candies is in the morning!
You’ll love it on whole-grain bread, in oatmeal, or as a fruit dip.
Ingredients
• 350g (2½ cups) raw almonds, roasted
• 70g (½ cup) desiccated coconut
• 4 tablespoons flax seeds (optional)
To Make
• First, heat oven to 160°C (320°F). Spread the almonds on a parchment-lined baking sheet or silicon baking mat. Roast them for 15 minutes until slightly golden brown. Allow the almonds to cool down until they are warm.
• Next, start by placing coconut in a food processor or high-speed blender and blend for 1 minute. Add the roasted almonds and flax seeds to a blender. Blend until creamy butter forms. It takes up to 3 minutes if you are using a food processor, and up to 10 minutes with a high-speed blender.
• Scrap down sides regularly. Be patient!
You might think that the almonds will never turn into creamy butter, but I guarantee you they will. Whole almonds will go from flour-like texture to clumps and to yummy creamy butter.
• Finally, pour your almond butter into a jar with an airtight lid. Keep it in a cool, dark and dry place, at room temperature for up to 2 weeks.
