Chai Latte Chia Puddiing

Chai Latte Chia Pudding is a delightful fusion of classic chia pudding and the aromatic, comforting flavors of a chai latte. This infusion gives the pudding a rich, cozy flavor reminiscent of your favorite chai tea. The magic happens when a blend of warming spices, including cinnamon, cloves, cardamom, and ginger, infuses the chia seeds and nut milk. 

The cashew cream adds a nice touch of nuttiness and creaminess. I find that this topping not only enhances the pudding’s taste but also provides a delightful contrast to the spiced chia base. The leftover can be used to garnish desserts, overnight oats, beverages, pancakes… I often eat it with fresh fruits as a dip. 😋

Ingredients

  • 250 ml (1 cup) nut milk
  • ½ teaspoon cinnamon
  • ¼ ground ginger
  • ⅛ ground cloves
  • 2 pinches of ground cardamom
  • pinch of black pepper
  • 2 bags black tea (4 g tea leaves)
  • 1-2 tablespoons maple syrup
  • 3 tablespoons chia seeds

Cashew Cream:

  • 225g (1½ cups) raw cashews, soaked for about 1h
  • 5 dried apricots, chopped
  • 1 teaspoon vanilla extract
  • pinch of sea salt
  • 250ml (1 cup ) water

To Make

  • In a small saucepan, combine milk, and spices. Heat over medium high heat while whisking occasionally.
  • When the milk starts boiling, turn off heat and stir in maple syrup.
  • Steep the tea in the milk for 10 minutes, then discard the bags or strain the leaves.
  • Pour into a glass container and stir in chia seeds.
  • Let settle for 2 minutes then stir again to ensure that the chia seeds are evenly distributed.
  • Chill for 2 hours or overnight.
  • To make the cream: place the ingredients in a high–speed blender. Process until very smooth.
  • Top it with cashew cream and sprinkle with cinnamon.
  • Garnish with a cinnamon stick and star anise.

Note

  • Adjust sweetness to your taste.
  • This recipe makes one serving of a healthy breakfast or two servings of a simple delicious dessert, snack or treat. 
  • You can also top it with fresh fruits, nut butter, coconut cream or homemade granola.
